Low GI Halloween Snacks

As you know, my home is a zero-white-refined-sugar home. So fun I know. But we still love snacks and sweet treats on occasion, so I’m an EXPERT when it comes to making tasty yummy treats while keeping my loved ones blood sugar under control (mostly without them knowing…or caring really). But I care a lot about this so here we are.

This Halloween snack collection isn’t about depriving anyone or making sad, “healthy” versions of your favorite treats that taste gross. It’s about creating genuinely fun, festive food that happens to support stable blood sugar. Ok, we’re on to something.

Every single recipe in this collection is designed with low glycemic principles in mind—meaning they combine smart carb choices with protein, healthy fats, and fiber. But mostly they’re just actually fun. Like, your kids, your family members, and even you will actually want to eat them.

The Jack-o’-Lantern Protein Balls

These adorable little pumpkin-shaped balls made with almond butter, actual pumpkin puree, oats, and protein powder, decorated with mini chocolate chips to look like jack-o’-lantern faces. And something about that makes me so happy. Sounds complicated, right? Nope. Forty-five minutes start to finish, and most of that is freezer time.

I made these for a friend, who’s been struggling with prediabetes, and she texted me asking, “Are these actually healthy?” Yes, they are.

Each one has 16 grams of protein and 5 grams of fiber. Compare that to a fun-size candy bar with zero protein and zero fiber, and you can see why these keep you satisfied instead of sending you back to the treat bowl every 20 minutes.

Using seasonal ingredients

What I love about this collection is how it leans into what’s naturally abundant right now (thank you Fall harvest and farmers)—sweet potatoes, pumpkins, apples, dates. These aren’t random “healthy” ingredients forced into Halloween shapes lol. They’re the perfect ingredients for fall treats that also happen to support stable glucose.

The Sweet Potato Jack-o’-Lanterns have a glycemic index around 63 (lower than white potatoes), and when you slice them thin, brush them with a bit of avocado oil, and bake them into crispy chips with little jack-o’-lantern faces cut out? It’s better than a regular chip. Crispy, slightly sweet, totally satisfying, and simply better than opening another bag of Doritos.

The Monster Apple Bites—just quartered apples with a wedge cut out for the mouth, filled with sunflower seed butter, pumpkin seeds arranged as teeth, and chocolate chips for eyes. The personal win here was simply seeing people get excited about eating apples. Apples.

Other snacks

Frankenstein’s Monster Guacamole. The guacamole itself is perfectly seasoned—avocado, green onion, cilantro, lime, cumin—and you arrange it on a platter with tortilla chips for “hair” and create a face with sour cream, refried beans, and olives. It’s festive, it’s fun, and it’s protein-rich thanks to the avocado and beans.

Creepy Crawly Spider Pretzels are another favorite. They’re little energy balls made with dates, oats, peanut butter, and cocoa powder, with pretzel pieces stuck in as legs and chocolate chips for eyes. They take 15 minutes to make, and they’re the perfect thing to have on hand when you need something sweet but don’t want to derail your entire day.

Candy Corn Chia Parfait. Layers of sweet potato, mango, and vanilla chia yogurt in little glass jars that actually look like candy corn (which is a candy I both loved & hated as a child). Sweet potatoes blended smooth taste amazing—almost like a natural pudding—and the whole thing has 4 grams of fiber and actual nutritional value. Revolutionary concept for Halloween, I know.

Make these snacks ahead!

Most of these recipes can be made ahead. The Bat Energy Bites can be kept in the fridge for a week or frozen for a month. The Spooky Spider Deviled Eggs I will make two days before a party. The Pumpkin Veggie Tray can be assembled at any time.

Don’t do things last minute… you can make a bunch of these on a Sunday afternoon while watching something spooky on Netflix, and then you’re SET for the week.

Wait, what about Halloween candy

I’m not going to tell you to never eat Halloween candy. That’s not realistic, and it’s not sustainable. If you want to have a few pieces of your favorite candy, have them! Enjoy them! Don’t make yourself miserable in the name of “being good.”

But what I will say is that when you have these kinds of options available—treats that are fun, festive, blood-sugar-friendly, and actually satisfying—you’re less likely to faceplant into the candy bowl because there’s nothing else around.

It’s about having choices. It’s about not feeling deprived. It’s about creating new traditions that make you feel good instead of guilty.

Lastly, I recommend eating one of the healthy blood sugar balanced snacks BEFORE you eat any candy. That’s a glucose tip so your body can process the extra glucose from the candy more slowly.

Recipes that works for everyone

There are options here for different dietary needs:

  • Nut-free options: The Spiders on a Log can be made with sunflower seed butter instead of peanut butter

  • Vegan options: The Pumpkin Veggie Tray, the Monster Veggie Dip Tray, Clementine Pumpkins

  • Gluten-free options: Most of these are naturally gluten-free, or have easy swaps like using GF pretzels

  • Kid-friendly: Pretty much all of them! The Banana Ghosts and Monster Apple Bites are especially big hits

Whether you’re hosting a Halloween party, need classroom snacks (that aren’t pure sugar), or just want to have festive options at home that won’t make you feel terrible, this collection has you covered.

My personal favorites

If I had to choose my top five from this collection, they’d be:

  1. Jack-o’-Lantern Protein Balls – The perfect balance of sweet, filling, and cute

  2. Frankenstein’s Monster Guacamole – Because guac

  3. Sweet Potato Jack-o’-Lanterns – Crispy, naturally sweet, and so much better than regular chips

  4. Spooky Spider Deviled Eggs – Classic deviled eggs with a Halloween twist—can’t go wrong

  5. Monster Apple Bites – The easiest one on the list and kids LOVE them. Again, apples!

They’re all good though. I haven’t found a dud in the bunch.

Time to try

This collection proves that you don’t have to choose between fun and feeling good. You don’t have to sit out the holiday or feel like you’re eating “diet food” while everyone else has treats.

Halloween is supposed to be fun. Food is supposed to be enjoyed. And when you can create recipes that honor both of those truths while also supporting your health? That’s the sweet spot. (Don’t grow tired of my puns, I’m just getting started).

This year, instead of a house full of leftover candy, try something different. Make a few of these snacks. See how you feel. Notice if you’re satisfied instead of searching for more. Pay attention to your energy levels.

Enjoy 🧡
