Low GI meals I ate this week, chocolate, and everyday life

Happy weekend, everyone.

Hopping in to share what’s going on over here — what I’m eating, what I’m working on, what I’m excited about, and what is currently driving me insane (spoiler, it’s ants).

🍝 Low GI meals I ate this week

It’s been warm here in California, and for me that means light foods, lots of veggies, and lots of seafood. Since I adhere to my protocol as well, I always have a mix of non-starchy and starchy carb options.

The pasta with clams, is a favorite of mine. My husband prepared it on Saturday for lunch. It’s so simple, and so delicious, with only a few ingredients: pasta, olive oil, salt, pepper, clams, and lots of fresh parsley. We enjoyed it outside with a glass of white wine.

Other meals from this week:

  • Egg White & Tofu Veggie Cups

  • Salmon Bake with Brown Rice

  • No-Bun Breakfast Sandwiches

  • Spaghetti with Clams (my husband’s specialty)

  • Frozen Yogurt bars filled with Homemade Chia Jelly

  • Apple, Spinach Flatbread

  • Raspberry & Dark Chocolate Chips

  • Veggie Omelette with Avocado

  • Brown Rice & Quinoa Cake topped with yogurt & blueberries

Pretty typical week in my house. Nothing overly complicated. Just real balanced meals.

🍫 Chocolate

A new chocolate shop opened up in town, so naturally I bought way too many to try. I’m not a big dessert person so I’ll typically have a serving of chocolate, which for me is about two pieces, and feel completely satisfied. I know I’m not the norm though, so if you looove dessert, I recommend the following:

  1. Share it with someone! Literally share the sugar (so you eat less and still enjoy)

  2. Choose what you want without all the fuss. Meaning: You eat it, you enjoy it, you move on.

A calm and peaceful relationship with food is possible.

Anyway, the Romeo & Juliette… white chocolate (I know it’s not real chocolate!) with cream cheese and candied guava… to die for.

😓 We have ants.

We have SO many ants, it’s miserable. I am battling them every day. They are in the kitchen, they are stubborn, and they are definitely winning. If anyone knows the BEST way to get rid of ants — like, bulletproof, works every time, they never come back — please comment. I am open to any and all suggestions at this point. Old wives’ tales, weird TikTok hacks, professional-grade solutions, I don’t care. I just need them gone.

That’s all for this week! Thank you for being here.

Have a beautiful weekend ❤️
