The low GI daily eating flow and finding trustworthy information

First, food for thought (on AI)

I worry about the world of AI. I worry what’s it’s doing to the quality of our lives. I worry as a health professional because every day it seems like more fake AI health content and companies are popping up with information that cannot be verified nor are they regulated. It feels like the wild wild west.

I also recognize that the speed of technology and making everything into an “app” is exclusionary to millions of people in older generations. I’m a millennial, sitting right in the middle, and have real lived experience before cell phones and social media and only one good tv in the house. And I also have experience with the internet boom, social media, and AI now taking over just about everything. To say I worry about my children’s future cannot be overstated.

What does any of this have to do with health?

I think everything.

Second, email (where truth will live)

I don’t know about you, but I really do not trust most of what I encounter on the internet. I have about a dozen trusted sources whose email list I am on so I can direct no distraction communication from them.

I love email because I get to choose. I can give consent to a company or person I want to hear from, and I’m guaranteed to hear from them. I’ve vetted them, I trust them, and I get a say in whether I want to welcome them in my personal inbox or not.

This is not true of social media. We are bombarded with media, no matter the quality, no matter if we want to receive the communication or not.

There is a near future in which our email inbox will be the only place we can get trusted human information of which we’ve given consent. Obviously some garbage slips through the cracks, but there’s always the trash button.

Now back to what this means about health. Your health.

I am one person that you’ve said, “yes, I want to hear from her”. And now more than ever I feel I have a duty and obligation as a health professional (who writes newsletters on the internet) to give you truthful and credited communication about health. Specifically, my area of expertise since 2011: blood sugar and releasing weight.

Living low GI is some of the most important work I’ll do in the world apart from raising children.

The daily flow from waking to sleeping is this:

Water — a full glass, first thing

Breakfast — protein-forward, within 60–90 minutes of waking

Snack — balanced, optional

Lunch — balanced, and this is where your starchy carbs go

Snack — balanced, optional

Dinner — balanced, starchy carbs reduced

Snack or dessert — optional, 2–3 hours before bed

Herbal tea — to close the day

This is the absolute barebones and I’ll start to fill in and give color to each part over the coming weeks. I wanted you to see and understand that it’s nothing fancy or complicated or that deviates much from most people’s regular day of eating.

Random things

I made cabbage rolls this week that I severely under seasoned 😅 we finished it all but next time need to season the ground turkey and tomato sauce more. This was from a recipe I found on Pinterest since I had a bunch of Napa Cabbage about to go bad and no clue what to do with it.

You ever see random produce at the farmers market and fantasize that you’ll be making a chef quality meal that week but then find you don’t have chef quality time? Anyways that was me. Big hopes and dreams for that Napa Cabbage.

I found this low GI friendly simple syrup made with Monk fruit at TJ Maxx. I love finding random gems at that store. I bought it to try in my coffee but… it was also a fail. I don’t mind the taste of Monk fruit or Allulose so I’m not sure what went wrong, but it had an unbearable taste. My mom always say TJ Maxx is where failed food products go 😂 — but I still love trying.

OK we do have winners though.

Each week I do a Clean Out The Fridge By Cooking Everything That Is Left In It meal. We had a pound of shrimp that needed to be cooked—another chef quality meal fantasy gone south. I ended up making shrimp roles with lettuce, avocado, and mango drizzled with coconut aminos.

There were two ready-made pizzas we got at the farmers market. Very tasty.

Some fresh pineapple and carrots!

And then my husband found this low glycemic white rice at our local grocery store. Never seen it or heard of it before but it tasted like normal white rice which is a win in our household since my husband is not a fan of my brown rice, quinoa, lentil mixture 🙃 — which is SO good btw. I’ll drop a recipe soon.

That’s all for this week. Have a wonderful weekend!
